There is nothing in the world better, than tea and cake.
before I moved to London, baking was something that I did most weekends. But since moving I’ve got caught up in the hustle and bustle of London living and neglected my mixing bowl and failed to produce much more than a loaf of Banana Bread – So I decided that I would commit to making something this weekend. my first problem arose when I woke up on Saturday morning to find the sunshine radiating through my curtains, I couldn’t bring myself to switch the oven on. Instead of baking I made an impromptu trip to Cambridge to visit some friends who I hadn’t seen since making the move. Sunday is bake day.
Recipe: Cherry & White Chocolate Muffins
250g Self-raising flour
1tsp Bicarbonate Soda
100g Caster sugar
100g Butter (melted)
2 Eggs
130g Natural Yogurt
100g White chocolate
140g Fresh Cherries
Peel of 1 Lemon
1/4 tsp Cinnamon
Mix together flour, and bicarbonate soda and add the cherries, white chocolate, cinnamon and lemon peel. Then add melted butter, yogurt and beaten eggs. Mix together well but be careful to not mix too much as the muffins will not rise as well other wise – (goes against everything we are normally told)
Pop them in the oven on about 180c for about 20mins – Check fan ovens, they might not need so long. This is a really simple recipe that doesn’t take much time to do. Whilst you wait you could make a cup of tea?
After I had finished I enjoyed them with a cup of Whittards, Cambridge loose tea in my new tea cups, which I received as gift for my birthday, from Sarah and Zam. It’s a gorgeous set from Oliver Bonas – I have 2 different designs, both of which are in my favourite colours. after receiving these I am now feeling a little inspired to make some of my own designs – watch this space <3
So I have finally baked in London and feeling very pleased with my Sunday afternoon treats, We’ve decided to have BBQ as weather is so fantastic so I am off outside, turning off my oven and shutting down the lap top till next time.
